I've got too many cookbooks but found room for "Pass the Plate" and this is the first time I've ever cooked my way through an entire book. Well written with ingredients that I either have on hand or easily accessible - the roasted tomato soup is a great example. I've made it three times already, improvising as needed (spinach for kale, ravioli for tortellini etc.) Tonight's menu - honey chipotle salmon tacos
I've just done this for dinner and I'm now absolutely obsessed, and holding myself back from getting a second serving because I need leftovers for lunch!
Made a few adjustments for what I had on my supermarket and I didn't want to have any food waste: spinach and ricotta tortellinis (the whole 300g pack), more heavy cream (300ml) and no kale, still an absolute banger.
One regular bowl of soup is never enough, but soup with a main course is always too much. Looks like you’ve found the perfect middle ground! I just had it, and I’m sure I won’t be hungry again in an hour. Thank you!

they’re heirloom tomatoes! I actually got the tomato plants from kroger haha
