Made this for dinner tonight and it was so easy, exactly the amount of effort I was in the mood for. I added some fingerling potatoes to the pan too. Love the crunch the breadcrumbs provide, and the punch of the lemon!

How do I make this for two pounds of salmon??? Do I heat it for the same amount of time??

Yes, same time in the oven! Just make sure you don't over crowd the pan. Depending on the pan size you are using, you can divide the salmon into 2 different baking sheets :) I hope you enjoy!!

Hi guys, planning on making this tonight. Is there a way to make it more meal prep friendly? Or is it best straight out of the oven?

I’d dare to say this is meal prep friendly! Cook everything as the recipe says, and store in the fridge. Whenever you’re ready to serve, heat the fish and leeks in the oven at a lower temp, then broil for 1 to 2 minutes until the panko is crispy again. Serve with yogurt and you should be good to go xx

okay slay!! I made this last night and it was amazing! my grocery store leeks didn’t look great so I used brussels sprouts and it worked perfectly.
