It was delicious! I only had an onion so I subbed it for the shallots and caramelized it with a little butter on top of the oil. I also only had sour cream to sub for the heavy cream and I topped it all with sun-dried tomatoes and black pepper instead of roasted because that was all I had in the pantry. Truly SCRAPS! This is so good! I had Navy Beans & made it in my Instant Pot. So creamy & satisfying & the toasty cumin & tomatoes are a nice touch!
