This inspired me to take the sad fennel from the back of the fridge and make a pasta sauce too. I didn’t have cream so I used egg yolk and parm (carbo style) with a little feta and it was so delicious!
I will be making this later tonight. But I intend using mascarpone instead of cream. I hope you do not disapprove.

It was very good. For my own taste I grated some lemon zest over it and squeezed the juice of half a lemon into it.
I made this but with farfalle pasta. It was wonderful. Thank you, Carolina. The family loved it!!!!

What a fabulous idea! I love fennel but usually roast it. Such a great idea to caramelise it in a pan!
