Carolina, this is so beautiful and inspiring. I am so proud of you--for you--of how far you have come and that you made this happen for yourself!! Carolina, this is the most beautiful and heartbreaking motivational post you wrote. I've been admiring your content for a long time - from when you started to gather more exposure and I discovered you on Instagram. I even one time wrote to Kimberly Espinel, who is making the "Eat Capture Share" podcast to invite you to be her guest because I wanted to know your story! :D

And now you shared the story and it shows to me that really... no matter where you're from, no matter your financial resources - EVERYTHING is possible if you love doing it. That knowledge is exactly what I need right now for my journey.

There is a local tourist area with many J-1 workers that I visit often - not unusual to be served by the same person at two different restaurants in the same day! It is such a brave and adventurous thing to do, and I always tip well as a small contribution towards the youth of our global community.

My copy of Pass the Plate just arrived and I read it cover to cover last night! Congratulations on a gorgeous book, and wishing you continued success and happiness!
