I'm thinking this would be excellent with an onion gravy or served over some whole fried green onions...either way, this is pure comfort food. Thank you!

I tried these last night, followed it to a T but couldn't get them right!! They just kept falling apart OR burning--No happy medium. The batch of NYT latkes I made with the same squeezed potato/onion mixture turned out perfect. Any tips? And is there a reason you use breadcrumbs instead of flour for these?

Looks amazing! Can I substitute breadcrumbs/matzo with flour, or would the result be too pancake-y?

This was my first time making latkes and this recipe was perfect! They turned out golden and crispy and delicious. I added some garlic powder and paprika and extra salt and pepper. Love love love. I paired them with a yogurt dipping sauce that I added some of the pickle brine to and some green onions and S&P. Delish!

Wow. These were a HUGE hit at my Hanukkah party last night. Crunchy, tangy, sour, a party in my mouth. Hands down best latke recipe so far. I used the Bubbies fermented pickles AND made martinis with the brine…I know how to follow directions lol. Thank you for knowing when and how to use pickles with respect!

AMAZING!! I made these for a Christmas brunch and every person LOVED them. The crunchy pickle with the crispy potato. Omg. The pieces of pickle that stuck out & got fried crispy too were my favorite! Will absolutely make them again!
