Huge fan here and thank you for always providing veg options! For the chicken substitution, do you have any thoughts on using vegan chickn? Or should I just stick to the subs you provided?

I HATE tomato paste and roasted/cooked tomatoes. Any substitution there?😬
I would simply omit it then, the spices will do their job and deliver enough flavor without the tomato paste :)

Made this last night on a whim because I had some chicken thighs to use up. Had to omit and substitute a few things but still came out yummy.
I made this curry this evening and all I can say is DAMN! It’s sooooo good ❤️❤️
