These look fantastic. That balance of texture is what makes a cookie so yummy.

You can take out the sugar and up the dates to a cup or so and they taste amazing!

Dates lend such a caramel-vanilla type flavor. Plus the fiber from the dates adds to the chewey-gooeyness🧡

What do you mean take out the sugar? You just whip the butter with no sugar? I'd love to make it this way :)

I use 1 date per Tbs sugar. (16 tbs in 1 cup). Chopped as fine as possible. And in this recipe that’s added to the other 1/2 cup. It might be too sweet. Maybe only use 3/4 cup plus the 1/2, depending on how sweet you like things. You can experiment.

Generally: Mix chopped dates into vanilla or whatever small liquid is in the recipe first, then mix/whip in butter etc.

Well it depends on your sweetness and desired texture.

Medjool for sure is softer and gooey-er, sweeter. Easy to work with.

But I use Deglet Noor mostly. However they are less sweet and less gooey, more chewy/more fiber.

Some dates (not common varieties in the West though) aren’t very sweet at all, more bread-like. So you can experiment with taste and texture before baking w them.

But yes generally any sweet date can sub for sugar.

Date, peanut butter, AND dark chocolate... this is basically a love letter disguised as a cookie lol. I made something similar last winter and convinced myself it was a health food for three full weeks. My husband did not agree but...but he ate four. Well, I'm off to go make this!

Made these & they were delicious!! I made the second batch with a smaller scoop so I could have more, but the aesthetics with the big cookie are the best. Soft & gooey & crisp at the edges.
